Hi #SmallBatchBakeAlong peeps! It's almost time for the next round, so I wanted to check in first.
That is, are folks up for another round right now? Because I should probably start it this coming Sunday, October 1st, but I could also see delaying a week. And since there weren't a lot of folks who joined in last round, I'm concerned that folks might be feeling swamped right now and I don't want to add to that feeling.
That being said the theme this round will be Face Your Baking Fears, and holy crud I have found some bakes. So far I'm looking into:
- Puff pastry ('rough puff' version)
- Cream puffs
- Chocolate souffle
- Crepe cake
But is that too scary sounding even for the season? (Like I could add in something simple and fun as a palate cleanser? I've been tempted to add in a dirt cake!) I'd love to hear your thoughts!

More moon cakes – it's time to see the insides. These more detailed patterns turn out to be harder to bake without the pattern vanishing – they've been in the oven four times, whereas the simpler patterns can be baked in two sessions.

Test batch for a jasmine tea filling and a white chocolate core. Not easy to bake this combination because the chocolate melts so easily, and can ruin the pattern on top.
Maybe I made too many...

New learning project: #Sourdough. I'm about four years late to the party, but I don't think it's too late to learn!
I'll be making my own starter from #Einkorn flour, starting today, God willing. It's the perfect temperature in my apartment to create a new starter from scratch.
In #Spain, Einkorn grain is known as "pequeña espelta" and it's not terribly easy to find. Some online stores based in #Catalunya carry it, though.

My mom requested chewy oatmeal chocolate chip cookies. After consulting the Cookie Companion I made these. They spread quite a bit, but they are chewy and quite tasty. I might give this recipe another shot. It had so many ingredients though. I feel like you could achieve the same thing with fewer ingredients.

I got a new @anovaculinary precision oven, and my first trial was a Tuscan bread baguette. I am amazed at the difference steam injection makes, the crust was by far the best I’ve ever had out of a home bake - thick and chewy and crackly and wonderful. And my baguette pan fits in the APO! 20 mins at 425F with the rear element with 100% steam followed by about 20-30 mins with the top and bottom elements with no steam to brown. #cooking #baking #anovapreci...
