Each December, I make pepparkakor, Swedish gingerbread cookies, as part of our celebration of winter, darkness, and the year's end. (Yes, those are hippos, along with the people and the round classic shapes.) When my son was little, we'd make these together every year. These days, it's just me, and while it's not the neatest bake, these are delicious. This recipe has a full teaspoon each ginger, cinnamon, and cloves, which make each crispy bite utterly delicious.

Ja, ja, ich weiß - der Titel ist heiß umkämpft und die verschiedenen Vanillekipferl-Religionen clashen regelmäßig. Diese Vanillekipferl backe ich seit über 30 Jahren jedes Jahr und verschenke sie - in der nicht ganz so zerbrechlichen Form von Vanilletalern - auch gerne an liebe Menschen. Einmal sind sie sogar im Hochsommer bis nach Afghanistan gereist.
Tipp: Das Rezept benötigt nur Eigelb, entweder ihr verbraucht das Eiweiß direkt für Makronen oder Zimtsterne oder ihr lagert es für ein paar Tage im Kühlschrank und nutzt es dann. Falls ihr gar nicht dazu kommt: Ich friere Eiweiß auch gerne ein (z.B. für eine Pavlova). Ich nutze dazu ein großes Glas, weiteres Eiweiß kann immer hinzugefügt werden (schreibt euch auf das Gefäß wieviele drin sind - und nein, das könnt ihr euch nicht "ganz einfach merken", believe me). Aufgetaut lässt sich das Eiweiß ganz einfach nutzen wie Frisches.

Ordered a bunch of holiday cookies for an apartment-warming party.
Everything is coming together nicely. I stepped out at some point and looked back up to the windows of my place, glowing up there on the top floor.
I would come to love this apartment.
The building would fill up with tenants.
A wonderful restaurant called Ruth’s Parkside Cafe would fill that large space on the first floor.
