I made some more Icecream again!
Even though this time I choose instead of making some tropical flavor to go with something more 🎄 christmas 🎄like.
I went with a spiced cream based ice cream.
Speculoos flavor to be specific, and as a topping I went with a kind of concentrated apple sauce with granny smith apples and lemonjuice to balance the sweetness.
Love how it turned out, kinda reminds me of apple strudel :j

Wanted to make a 🌴 tropical-like☀️ flavor.
So I went with coconut cream for the ice cream base. For flavouring I mainly used peach, a little strawberry & a bit of mashed lemon confit which I made myself earlier this year.
Before freezing I also added some lemon confit cubes and citric acid to balance the richness.
It turned out super fluffy and airy \o/
We're also #FineWithBacon...
At my new place, the ice cream van comes past once a fortnight. They ring the bell... so you anticipate the arrival for about 30 min!

Sometimes life gives you lemons, other times... ice cream pralines.
I'm in the habit of waiting for autumn discounts to buy ice cream. This year, there have been hardly any. The things I considered buying *if* they got discounted to an OK level... had discounts of at most 20%. Which still put them over 30 lei or more. Yeah, no.
Only got 2 boxes of frozen desserts. And found 13 ice cream pralines in one of them... instead of 12 as written on the box.

Lavender (gluten free) ice cream from Angela's Organic Ice Cream in Petaluma.
They ran out of the waffle cone, and only had the gluten free waffle cone, so I got that. It was really good. The lavender ice cream is really special! 😋

I made the vanilla ice cream with salted bourbon caramel cured egg yolks from cook’s science, and it was delightful. I used the @benandjerrys french vanilla recipe. Probably 8 hours was too much for curing the yolks, but they were still pleasantly runny in the middle. It really tastes more like custard and caramel than egg. #dessert #curedeggyolks #icecream #cooking

I finally had a nice weekend, so I did some cooking: a dairy free pistashio gelato made with pistachio paste I made from pistashios I individually peeled, smoked rack of lamb reverse seared over a charcoal tower, and smoked short rib and pulled pork. It was a good weekend.
