🌶️ a much loved dish from the Assam - Dal with Red Lentils and Mung Dal. With left-over special Eggplant Curry, rice, and roti from left-over dough from last night. #no-waste

🔥 An Indian friend taught me to put roti briefly over a gas flame when it is cooked (both sides). It gives it a lovely smoky flavour and clear separation of the layers (puffs it more). Actually, you should try it, that smoky flavour works for a whole lot of things.

🍑 I found some of those rock hard dried apricots from the Afghan shop, that turn into the MOST delicious fruits once rehydrated. Now I have to consider how best to use them. They are delicious, and I had forgotten I had them (They were filed with the lentils.)

🍰 We had the last of the 4-Ingredient Fruit Loaf today, toasted with butter. I recommend 1st day fresh, 2nd (and possibly 3rd) day with butter or similar spread, and last day toasted with butter or spread.

If you go beyond that, cube it and serve with custard. But I am not sure how it would last that long!!! 🤷‍♀️

🍮 Also, tomorrow I plan to make sago payasam 😋 That'll be my 1 sweet thing for this week.
