I’m looking for a new chili recipe. The one I use from ATK is great, but I just need a change of pace.

If anyone has a link or a screenshot of their go-to favorite, I’d love to see it.☺️

@RolloTreadway You've inspired me to share a recipe of my own; it's not totally original, but the simplifications are mine.

The recipe is for peanut butter fudge, and I'll warn you now, it is RADIOACTIVELY sweet. It's so sweet that I've actually never met anyone besides myself who liked it. I've got the sweet tooth to really enjoy it though.

What you do is you buy a new 340g jar of peanut butter (this is the default size), a new 250g knob of butter (the kind that comes wrapped in foil rather than in a tub), a new 500g packet of icing sugar (the default size), and make sure you have access to some salt.

Then you throw the *entire* jar of peanut butter (or as much of it as you can manage) and the *entire* knob of butter in a saucepan and melt them in a medium heat. Once that's done, you add the *entire* packet of icing sugar, plus a teaspoon, teaspoon and a half of salt, and mix it all together.

Once it's all homogeneous, transfer to a baking tray lined with baking paper, and then I do recommend that you put it in the fridge for an hour or two (the longer the better) to set, because while it's perfectly scrumptious as is, it is nicer to handle solid blocks of fudge.

And then you have fudge without having had to measure *anything*.

Secretly I did not like it, but my mom liked to make it, especially when company came over. My first foray into shrub-making. When I used to drink alcohol I really liked the layers of flavors that good cocktails had. A good shrub makes me happy now. (I very much dislike soda)

Recipe adapted from the Michael Dietsch book “Shrubs”, using the winter nellis pears I get here in California and subbing out a part of the apple cider vinegar for balsamic vinegar, for the extra punch I enjoy. More instructions in alt text.

#Food #Beverages #Shrubs #Recipes

A photo of pear ginger shrub in a jar
A recipe for the pear ginger shrub. It reads: 5 winter nellis pears, not peeled but washed and cored. 1/2 cup apple cider vinegar. 1/4 cup rice vinegar. 1/4 cup balsamic vinegar. 1 cup brown sugar.

(You may also use all apple cider vinegar. In that case, do 1 cup apple cider vinegar and ignore the others. Use any pears you can find if you don’t have these ones)

Not in shown recipe, but additional recipe steps. Add all ingredients together. Crush fruit, stir to combine. Cover. After a day in the fridge, strain mixture to remove solids. Stir to dissolve all sugar. Whisk well. Cover and leave in fridge for a week.

Elizabeth David goes to such lengths to cook chickpeas for soup.

⭐ Soak overnight with 2Tbs flour
⭐ Strain, bring soaking liquid to boil with pinch baking soda, then leave to cool
⭐ Add the rinsed chickpeas to the cooled soaking liquid, bring to boil, simmer 1 hour.
⭐ Strain and add chickpeas to fresh water and cook until tender.
⭐ Strain, reserving liquid. Remove half chickpeas for a salad
⭐ For the soup, add chickpeas and enough reserved liquid to cover, with tomatoes, onions, leeks, seasoning.
⭐ Puree and reheat. Serve with croutons.

Cellar Crumbs - a pie a month, with a twist:

It has all my 2023 pies so far, sweet and savoury, each inspired by a cocktail.

Includes these four - Apricot Julep Pie, Appletini Hand-Pies, Liberté Tarte, Gin and Tonic Pie

Apricot Julep Pie - A rough-puff pastry topped pie next to a glass containing a whisky cocktail, crushed-ice and fresh mint garnish, on a brown wood-effect background.
Appletini Hand-Pies - An oblong plate with three large, golden-brown Cornish-pasty shaped hand-pies on it. Next to it is a Nick and Nora with a luminous green cocktail in it and garnish of three apple slices on a gold stick. They are both sitting on a golden background.
Liberté Tarte - A slice of tart with cooked oranges, crushed juniper berries and rosemary leaves on top, with a caramel sauce and puff pastry. It is on a decorative brown plate with white circles. Next to it is a clear cocktail in a Nick and Nora with an orange peel garnish on a gold stick. They are sitting on a dark wood-effect background.
Gin and Tonic Pie - About half of a jelly-filled pie in a pie dish, a balloon glass filled with a G&T, and a plate with a broken-apart piece of pie and a fork on it. The pie and slice are topped with candied lemon slices. Everything sits on a brown wood-effect background.

Chicken tinga recipe

Makes about 8-10 servings, depends on how you’re serving it. Takes about 10-15 minutes prep to chop and mince, then about 1½ hours of relatively hands-off cooking.
Heat a large pot over medium-high heat. Add about 2 TBSP of oil of your choosing, and then two sliced onions. Cook the onions until translucent, then add about 1 finely chopped chipotle…

A recipe card for Sheep Penis, from The History Shapes Cookbook. It features Ray, a grumpy blue square, wearing a ca. 1450s Dutch hat and holding back two rams. He is blocking them from seeing what is on the plate in front of him: cooked sheep's penis.

Copy reads:
Sheep Penis
The Netherlands, circa 1450s CE

    1 sheep's penis
    10 egg yolks
    1/2 tsp saffron
    1 Tbsp milk
    1 Tbsp lard
1 pinch of each; ginger, cinnamon, and black pepper

Thoroughly wash the penis.
Combine eggs, saffron, and milk in bowl.
Temper the penis with lard and stuff with egg mixture.

IMPORTANT: Do not overstuff the penis.

Blanch the stuffed penis in boiling water.
Roast until golden brown and remove from oven to cool.
While cooling, dust with ginger, cinnamon, and black pepper.

How to make Singapore / Malaysia-style soft-boiled eggs for breakfast:

- Bring pot of water to a rolling boil
- Turn off the heat
- Take eggs out from fridge, drop them gently into the pot
- Cover
- Let it steep in this hot water for 6-7 min (small/medium eggs straight from the fridge), 8-11 min for large eggs
- Crack into bowl, add white pepper and light soy sauce

It's supposed to be v runny. Add a min if you don't like runny eggs; reduce a min if eggs are room temp

Finally back in my happy place: Yé Yint, the oldest and most popular Burmese tea shop in Singapore. Burmese milk tea: S$1.50 (a bit over US$1). Food is also great here, but there is no English menu! (Ladies speak Burmese, English, Mandarin)

Burmese milk tea

People of Earth! I’ve just made a lemon yogurt as good or better than the discontinued lemon yogurt from Trader Joe’s. I used my homemade whole milk very thick strained kefir yogurt but I imagine it would work with store-bought Greek yogurt.

Whisk together 1 tablespoon sugar and 1 tablespoon fresh lemon juice. When thoroughly combined, whisk into 1/2 cup plain yogurt.

Now, I like a LOT of lemon. If you want it more mild, start with 1/2 tablespoon juice. #recipes #fermentation

A little bowl of thick, creamy yogurt. It’s pale yellow and looks so tempting.

Omg this mini eggplant parm is really REALLY good, and made two little Kara meals. I think you could use a medium eggplant and double everything else for a family meal (I needed more crumbs and egg, so next time I’ll use 3/4c crumbs and add a couple tablespoons of water to the egg to make it go further). It’s tiring to fry all those eggplant slices, so I might try baking them on a sheet pan next time. But man, it was worth it. #recipes

Chinese Cooking Demystified has an amazing video in which they talk about how Chinese sourdough techniques are actually used to make the fluffy dimsum breads we all love but cannot replicate at home (and isn’t well documented). And why it’s different from western style sourdoughs
