@RolloTreadway You've inspired me to share a recipe of my own; it's not totally original, but the simplifications are mine.

The recipe is for peanut butter fudge, and I'll warn you now, it is RADIOACTIVELY sweet. It's so sweet that I've actually never met anyone besides myself who liked it. I've got the sweet tooth to really enjoy it though.

What you do is you buy a new 340g jar of peanut butter (this is the default size), a new 250g knob of butter (the kind that comes wrapped in foil rather than in a tub), a new 500g packet of icing sugar (the default size), and make sure you have access to some salt.

Then you throw the *entire* jar of peanut butter (or as much of it as you can manage) and the *entire* knob of butter in a saucepan and melt them in a medium heat. Once that's done, you add the *entire* packet of icing sugar, plus a teaspoon, teaspoon and a half of salt, and mix it all together.

Once it's all homogeneous, transfer to a baking tray lined with baking paper, and then I do recommend that you put it in the fridge for an hour or two (the longer the better) to set, because while it's perfectly scrumptious as is, it is nicer to handle solid blocks of fudge.

And then you have fudge without having had to measure *anything*.

Miso Roasted Butternut Squash

Recipe by Heidi

Ingredients

- 1 medium or large butternut squash , peeled, seeded and cut into wedges or 1-inch cubes
- 5 tablespoons white miso
- ¼ cup mirin or sake
- 2 tablespoons vegetable oil
- 2 tablespoons rice vinegar
- 2 tablespoons light brown sugar
- 1 tablespoon thick soy sauce
- 2 teaspoons sesame oil
- 1 tablespoon minced red jalapeño , seeded
- 1 tablespoon minced cilantro leaves

Instructions

Preheat oven to 400 degrees F.
Mix the miso, mirin, vegetable oil, rice vinegar, brown sugar and soy sauce in a small bowl until the sugar has dissolved. Place the butternut squash on a roasting pan sprayed with cooking spray, skin side down, and slather with the miso mixture.
Roast for 45-50 minutes or until fork tender. Serve whole or cut wedges in half. Garnish with red jalapeño and cilantro and drizzle with sesame oil. Serve with additional miso mixture if desired.

I never heard of a "coddle" until today but it must be good as my stomach is rumbling at 03:46 in the morning just reading this winter #recipe 😋 and fantastic details in the Guardian on making it:

Serves 4-6

1 small knob of butter or lard, or a little oil
8 thick rashers unsmoked bacon (back bacon with a good stripe of fat, for preference), or 250g bacon lardons, chopped into chunks
2 large onions, peeled and sliced
A few thyme sprigs, leaves picked, or 1 small bunch parsley, finely chopped
6-8 pork sausages
About 800g waxy potatoes, peeled and cut into large chunks
800ml-1 litre ham or chicken stock, or water, or half water, half cider
Salt and black or white pepper
A little chopped parsley, to finish (optional)
Cabbage and brown sauce, to serve (optional)

My first foray into shrub-making. When I used to drink alcohol I really liked the layers of flavors that good cocktails had. A good shrub makes me happy now. (I very much dislike soda)

Recipe adapted from the Michael Dietsch book “Shrubs”, using the winter nellis pears I get here in California and subbing out a part of the apple cider vinegar for balsamic vinegar, for the extra punch I enjoy. More instructions in alt text.

⭐ Soak overnight with 2Tbs flour
⭐ Strain, bring soaking liquid to boil with pinch baking soda, then leave to cool
⭐ Add the rinsed chickpeas to the cooled soaking liquid, bring to boil, simmer 1 hour.
⭐ Strain and add chickpeas to fresh water and cook until tender.
⭐ Strain, reserving liquid. Remove half chickpeas for a salad
⭐ For the soup, add chickpeas and enough reserved liquid to cover, with tomatoes, onions, leeks, seasoning.
⭐ Puree and reheat. Serve with croutons.

How to make Singapore / Malaysia-style soft-boiled eggs for breakfast:

- Bring pot of water to a rolling boil
- Turn off the heat
- Take eggs out from fridge, drop them gently into the pot
- Cover
- Let it steep in this hot water for 6-7 min (small/medium eggs straight from the fridge), 8-11 min for large eggs
- Crack into bowl, add white pepper and light soy sauce

It's supposed to be v runny. Add a min if you don't like runny eggs; reduce a min if eggs are room temp

My Holiday Mac & Cheese recipe which I triple because it disappears so fast.

Roast chunks of butternut squash in oil, with an oiled head of garlic wrapped in foil.

Blend the garlic and about a third of the squash with some* sour cream, cream cheese, nutmeg, salt, pepper, and allspice.

Add the sauce to cooked pasta. Stir in lots of grated cheese and add more to the top. Sprinkle with seasoned breadcrumbs and truffle oil.

Bake. Rejoice.

Burmese milk tea

People of Earth! I’ve just made a lemon yogurt as good or better than the discontinued lemon yogurt from Trader Joe’s. I used my homemade whole milk very thick strained kefir yogurt but I imagine it would work with store-bought Greek yogurt.

Whisk together 1 tablespoon sugar and 1 tablespoon fresh lemon juice. When thoroughly combined, whisk into 1/2 cup plain yogurt.

Now, I like a LOT of lemon. If you want it more mild, start with 1/2 tablespoon juice. #recipes #fermentation

Omg this mini eggplant parm is really REALLY good, and made two little Kara meals. I think you could use a medium eggplant and double everything else for a family meal (I needed more crumbs and egg, so next time I’ll use 3/4c crumbs and add a couple tablespoons of water to the egg to make it go further). It’s tiring to fry all those eggplant slices, so I might try baking them on a sheet pan next time. But man, it was worth it. #recipes
