I had the best corned beef of my life last week. I followed my standard recipe for corned beef at home, and added amazake to the cure—the enzymes produced by koji tenderize the meat and make searing at the end quick and easy.

Doing vocal comping on this track has taken way longer than I expected. But I'm finally getting to eat some corned beef and cabbage for a belated St. Patrick's Day dinner. And Instant Pot to the rescue, so it only took 2.5 hours to cook instead of 4.5!
Not being Irish but always looking for an excuse to travel vicariously through food, we did not miss the opportunity to celebrate St. Patrick's Day: corned beef with brown-sugar-whiskey-mustard glaze in the slow cooker with Guinness, Boxty (Irish potato pancakes), Irish soda bread made with spelt, and some veggies on the side (albeit a little untraditional due to dietary restrictions). Plenty of leftovers!

Do you know why it's called corned beef? Because "corn" originally meant "individual grains of a cereal crop," (which is why you'll often see "corn" used to refer to wheat in older documents) and by extension "grains of salt." So to corn something meant to salt it down for preservation. Hence, corned beef. Why it's the only salted meat that is still called "corned" is a mystery to me. After all, salt pork is just corned pork. Salted fish is corned fish. But no, only beef is corned anymore.
Potatoes are a miracle crop. They greatly enhanced the diet of poor Europeans once they were introduced from the Americas. Yet another thing we can thank Native agriculture for, because the potato in its natural state is basically the size of a peanut. Dan Quale famously couldn't spell "potato" at a photo op with students, which at the time was a big deal, although now we'd probably have half the country telling Starbucks their name is potato with an E to own the libs.
And St. Patrick was probably Italian if he existed at all, and his color was blue, not green.
So on this blue day of salted beef and tubers which don't have certain vowels in them, enjoy your Guinness responsibly, and remember that beer is frequently clarified using extracts taken from fish swim bladders so it's not vegan.
