We put them in the "office" part of the garage (which it will be once house renovation is done and we've moved back in), and @swmbo and I are in the actual garage part.

The apartment was a rebuild within the same confines - nicer cupboards, countertop and induction stove. The one I just finished was a brand new constructed room, so I could finish the new kitchen before taking the old one down. Building stuff as very rewarding 🙂

When I worked (briefly) in a #kitchen (back in my salad days 🤣), I learned a few things:

1. If you drop something, 𝗱𝗼𝗻'𝘁 try to catch it. (Think #knife.)
2. If you're carrying a pot of soup or something, announce "HOT STUFF!" as you move through the kitchen.
3. Scrape sliced items from the cutting board with the 𝘀𝗽𝗶𝗻𝗲 of the knife, 𝘯𝘦𝘷𝘦𝘳 with the edge!

I can't count the number of times I see #3 violated. It's like nails on a chalkboard for me.

So, long story short I'm a terrible baker and somehow I agreed to bake my wife a croquembouche for her birthday, possibly one of the most complex dishes out there (somewhere in the range of 6-8 hours of effort). My wife enjoyed several glasses of prosecco and invited a bunch of friends over to mock me in the kitchen as I fumbled my way through the recipe (the peanut gallery was part of the deal; I didn't mind).

Let's be real, this thing looks TERRIBLE and that's mostly because the shoux pastry didn't rise (apparently I added too many eggs) but let it be known that I absolutely nailed the custard and the caramel, way above everyone's expectations. It tastes great too (mainly because of the custard).

I hate long cables on the counter, so I buy replacement short power cables for the appliances that have removable cords. A little color to make them easy to spot is a bonus.

A search for "monoprice 2ft red c13" (or 1ft blue) on your shopping site of choice should track down the same ones I have here.

Tired of ghetto-looking grout that’s all mucked up, so my kitchen never looks clean, I’ve gone and spent $25 for two grout pens.

I ultimately settled on the 500. I think it'll be enough for what we need right now, and I saw at least 1 person mention that smaller batches in the 7 were hard.

I think we'll be doing more small batch work than large, and I decided worse case we can split batches into 2 if need be. I really just want to be able to make a couple loaves of bread and mix the occasional cookie dough.

Absolute worse case, we have to upgrade in the future.

I recently sanded one of my cast iron pans so the cooking surface was much smoother, mostly as an experiment. This of course means I need to re-season the pan, since it was mostly bare iron.

In an effort to help build a new season, I've been cooking patty melts the last 2 days for lunch, and I'm *really* getting my technique down.

Rye bread, butter, swiss cheese on top of the bread in one pan on medium low (around 250*F) allows the bread to grill and become good and golden/crispy. I start this after frying onions, but before starting the burger patty.

I've been using 80/20 chuck for the patty, seasoned w/ salt and pepper, and doing it smash burger style. I do this after frying the onions in oil and adding salt.

All around a good sandwich
