Wenn Müller mit kleiner Mühle überleben wollen, müssen sie neue Quasi-Mehle in ihrer Versuchsbäckerei testen. Als Schüler war ich auch Tester.

U.S. winter #wheat abandonment at 32.6% this year is pegged to be the highest since 1917 and second highest on record.
There were clearly great difficulties during the 1930s and1950s in growing winter wheat, which was then as now, produced mainly on the central and southern Great Plains.

Some of the #Kansas wheat is bluish from lack of moisture. #Drought has left many of the #wheat plants short and damaged. The USDA has forecast that the abandonment rate will likely be the highest since 1917. 🌾

2019: #Gut #microbiota and #neurological effects of #glyphosate

Abstract: "There are currently various concerns regarding certain environmental toxins and the possible impact they can have on developmental diseases. Glyphosate (Gly) is the most utilised herbicide in agriculture, although its widespread use is generating controversy in the scientific world because of its probable #carcinogenic effect on human cells. Gly performs as an inhibitor of 5-enolpyruvylshikimate-3-phospate synthase (EPSP synthase), not only in plants, but also in bacteria. An inhibiting effect on EPSP synthase from intestinal microbiota has been reported, affecting mainly beneficial bacteria. To the contrary, Clostridium spp. and Salmonella strains are shown to be resistant to Gly. Consequently, researchers have suggested that Gly can cause dysbiosis, a phenomenon which is characterised by an imbalance between beneficial and pathogenic microorganisms. The overgrowth of bacteria such as #clostridia generates high levels of noxious metabolites in the #brain, which can contribute to the development of neurological deviations. This work reviews the impact of Glyphosate-induced #intestinal dysbiosis on the central nervous system, focusing on emotional, #neurological and #neurodegenerative disorders. A wide variety of factors were investigated in relation to brain-related changes, including highlighting #genetic abnormalities, #pregnancy-associated problems, #diet, #infections, vaccines and heavy metals. However, more studies are required to determine the implication of the most internationally used #herbicide, Gly, in behavioural disorders."

The majority of the #wheat in the #Texas Panhandle will not be harvested as it simply cannot recover. The wind and sand storm earlier this year severely damaged or completely destroyed many wheat fields. Pastures remain very dry as summer nears.

A wheat field with a single tree

I prefer to bake #wholeGrain bread. Whole grain bread is tasty, contains important vitamins, fibers, and minerals, and it's also very satiating. Of course I also bake with #sourdough, which helps keeping the bread fresh.

#Mischbrot is probably the most popular kind of bread in Germany. Normally, it's made with a blend of #wheat and #rye, and it's traditionally baked with #sourdough. It has a grey crumb. It's not as soft as wheat bread, and also not as chewy as rye bread.

#Spelt / #dinkel, an ancient kind of wheat, recently became very popular in Germany again. It has a very tasty, nutty flavour.

So as you might guess, one of my favourite breads is *whole grain Dinkel-Mischbrot*. I bake it with a sourdough (consisting of one part of spelt and one part rye, and some starter) at 75% hydration, and two additional parts of spelt and rye in the main dough. The overall hydration is 80%. Because half of the flour is pre-fermented, fermentation & proofing of the main dough is quite fast (only 2-3 hours at room temperature), which makes it a very practical recipe. In this particular bake, I added #olives while shaping the bread. The bread bakes for 20min with lid, and 45 min without lid, at the maximum temperature of my toaster oven (230 °C).

You can see a two-pound loaf of rectangular, rustic brown bread. It is dusted with some rye flour. In the middle of the bread, it has some added dough that looks like a 'lid'. The bread lies on top of the ceramic bread box.
A cut of the same loaf of bread. There are bite marks in the cut-off piece that lays in front of the loaf. The crumb is quite dense with only small holes. You can see some slices of olives, which are unevenly distributed in the dough. I could have certainly added even more olives!
